What does S3 mean on a work boot?

The S3 rating means it is a 200 joule toecap, penetration resistant midsole, water resistant upper and a cleated energy absorbing sole, for wet and outdoor work; metatarsal protection over the top of the foot; the top slip resistance rating, tested on both ceramic and steel floors.

What size should I order?
